Chervis is one of the root vegetables widely cultivated and eaten in the Middle Ages. Mentioned in the Capitulary of Charlemagne, it fell into oblivion in the 19th century.

A member of the umbelliferae family like the carrot, it prefers sandy soil in which its roots can flourish. Chervis is perennial, so replant a few roots after harvesting to keep it going.
Uses : Chervis is a forgotten vegetable whose roots are eaten boiled, like salsify. They have a mild, slightly sweet taste.
Sowing : Sow in spring or autumn directly in the ground, then transplant every 30 cm when the seedlings have 4 to 5 leaves. Harvest roots the following autumn and throughout the winter.
