Hyssop is an aromatic shrub native to the Mediterranean. It thrives in well-drained, sunny soils. Its blue flowers bloom from July to September, providing a late supply of nectar for pollinators.

Uses : Hyssop flowers and leaves are used as a condiment in dishes and salads. They are also used to make a medicinal liqueur for cold weather.
Sowing : In nurseries from February and in the field after the last frosts.
